Just checking various Canadian book sellers, it appears that you can’t, yet.
This question (and in other locales) seems to arise with each new book. Canadian availability appears to lag US by a few weeks to months. This is all up to the publisher (Rodale), and Dr. Davis may not have any role in the process.
Translations take even longer, and I don’t know that the French editions are actually français canadien, much less québécois. ☺

I was searching your list of autoimmune diseases for Sjogrens disease and wondered if you have any insight on special eating for it.

I don’t know, and Dr. Davis might not know either, because that decision is often made and implemented by the publisher, with little or no author participation. Be cautious when browsing bookseller site pages. I see that some lump all the editions of WB together, and are showing audio products, but they are dated to the 2011 original & 2014 paperback releases.

I don’t see WB’2019 listed, but I do see several titles there with 2020 release dates.
And then there’s the question of what audio format. The original 2011 book was available on CD media, and that appears to be unlikely for the 2019 edition, with streaming or downloadable being more likely if audio is offered.
I have the original 2011 edition on CD, and it points up a problem with any audio format for this work: the recipes. Recording someone speaking them appears to be impractical, and isn’t done. Instead, those pages were provided as a PDF on separate CD. I don’t know how Audible handles this.
